Ingredients
-
1 oz Bittersweet Aperitivo
.75 orange Juice
.75 oz citrus Oleo Saccharum*
.75 oz chamomile tea**
.5 oz lemon juice
Lemon twist
Garnish
Directions
Shake all ingredients with ice for 10 seconds.
Double strain into a chilled coupe.
Garnish with a trimmed lemon peel.
Note
*For Oleo Saccharum, remove the peels from 6 oranges and 6 lemons, cut out any pith using a sharp paring knife (watch your fingers!). Add to a ziplock bag, seal and weigh on scale. Weigh out an equal portion of white sugar and add to bag. Move sugar around so that all peels are coated, press out all the air from the bag and seal tightly. Allow to rest at room temperature for at least 24 hours. Massage regularly, coaxing the oils out from the peels. When ready, strain and store in the fridge.
**For Chamomile Tea, take 1 bag of chamomile tea and steep in 8 oz hot water for 20 minutes. Remove the bag and allow it to cool.
