How do you make your aperitivos?

An aperitivo should begin with bright aromatics, followed by intriguing flavors like bitterness and astringency. To preserve these bold flavors, we use multiple extraction techniques, as distillation alone would strip away key qualities. Bittersweet and Citrus Aperitivo rely on at least four methods, including distillation. In this way, it looks a lot like the way aperitivos have been made in Italy for centuries. Each botanical offers something unique to the finished product, and over decades of working with botanicals Founding Distiller Seth O’Malley has developed an intuitive relationship with each one, learning how to draw out the right flavor using the right process.

Who makes them?

Seth O’Malley, our Founding Distiller, makes each batch of aperitivos from start to finish. From sourcing the best raw botanicals from around the world to measuring them into the brew kettle, to running the SCC, we do everything ourselves here in Oregon.

What do they taste like?

Flavorful, complex, and delicious. Our aperitivos are bold, intricate, and made to linger.

How do I use them?

There’s no need to embellish with complicated cocktail ingredients, but the foundation of our spirits can support the whims of the most creative bartenders. When preparing at home, Wilderton aperitivos can be mixed simply with club soda or your favorite sparkling water and an orange slice garnish for a delicious, easy-to-make spritz.

Are they gluten free? Caffeine free? Vegan?

Yes! All of our expressions are free of gluten, caffeine, and they are also vegan. Our aperitivos contain a small amount of raw cane sugar.

Are they 100% free of alcohol?

Our aperitivos are classified by the FDA as non-alcoholic but do contain a trace (less than 0.1% ABV) of alcohol. Ripe fruit, bread, vinegar and other common foods and beverages can also naturally contain similar trace amounts of alcohol.

Can I drink these when pregnant, on a diet, or taking medications?

We recommend that you consult your healthcare provider for any specific questions or concerns.

Do they have a best-by date?

We recommend you refrigerate Bittersweet aperitivo for optimal freshness. Our aperitivos have a best-buy date on the back. 18 months from bottling.
