Fruity, floral, and effervescent - this spritz is an ode to springtime in the Northwest.
Ingredients

1 oz Citrus Aperitivo
2.5 oz non-alcoholic sparkling rosé
.75 oz rhubarb/lavender syrup*
.25 oz lemon juice
Lavender sprig
Garnish
Directions
Add all ingredients except sparkling wine to shaking tins
Add ice and shake for 10 seconds.
Double strain into a coupe
Add sparkling wine.
Garnish with lavender sprig.
Note
*For rhubarb syrup, add 1000 grams of chopped rhubarb to a pot with 500 grams white sugar, ,500 grams water, and 1tbsp dried lavendar and 8 lavender sprigs. Cook on low, stirring regularly until rhubarb begins to break down. Allow to cool and pass through a fine sieve. Store in fridge. for 45 minutes. Rhubarb should be very soft. Strain off and store in the fridge.
